macho: fix writeSymbolTable() function

After merging `populateMetadata` with `populateMissingMetadata`,
it is imperative we clear the number of symbols in `writeSymbolTable`.
However, this is hopefully just a temp measure until the convergence
of incremental with traditional is complete.
